Corn soup

Here’s a delicious and creamy corn soup recipe that's easy to make:

Ingredients:

  • 4 cups fresh or frozen corn kernels (about 4-5 ears of corn if using fresh)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream (optional for creaminess)
  • 2 tablespoons butter or olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme (fresh or dried)
  • Optional toppings: chopped chives, croutons, or a drizzle of olive oil

Instructions:

  1. Sauté Aromatics: In a large pot, heat the butter or olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Add minced garlic and cook for another minute.

  2. Add Corn: Stir in about 3 cups of the corn (reserve 1 cup for garnish) and cook for a few minutes, allowing it to soften slightly.

  3. Add Broth and Seasoning: Pour in the vegetable or chicken broth and add thyme. Bring the mixture to a boil, then reduce heat and simmer for about 15-20 minutes.

  4. Blend: Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, you can blend just half of it and leave the rest whole. Alternatively, transfer to a blender in batches.

  5. Add Creaminess: Return the soup to the pot and stir in the milk or cream if desired. Heat through but do not boil.

  6. Season: Taste and adjust the seasoning with salt and pepper.

  7. Serve: Ladle the soup into bowls, top with reserved corn, and add any optional toppings you like.
